I love that your cheese shop sells shredded ends. I’ve kept a cheese box in my freezer for years. Whenever I have a little bit of cheese left from a recipe, I grate it into the box. Then I use the box when I make quesadillas or grilled cheese sandwiches, or need a topping for a mac and cheese casserole.
