Great article. I don’t know how much salt brining adds to the turkey but since I have hypertension and my significant other has to restrict her sodium intake, I don’t brine my turkey. Like Chuck I put butter on the outside of the turkey and I also put some seasoned butter under the skin. All you need to do is melt some butter, add your seasoning(s) (your choice), harden the butter in the
fridge and then take pieces of it and slip it under the skin. It takes a couple of minutes but it makes the skin nice and crispy and adds moisture to the meat. The seasoning(s) get into the meat and make for a really great turkey.
